This has been of my favorite quick and easy vegetarian dishes. I don't have the picture of the end product because I was in a hurry to get to a pitch-in dinner and forgot to take a photo! Just follow the simple directions and you should have no problem executing this recipe.
What you'll need:
Marinara sauce - 1 cup
Mozzarella - 1 cup shredded
Salt - 1 pinch
Pepper - 1 pinch
Basil - 1/2 tsp
Oregano - 1/2 tsp
Italian seasoning - 1/2 tsp
Eggplant
Zucchini
Yellow Squash
Tomatoes - 3 to 4
Onion - 1/2

What you'll need:
Marinara sauce - 1 cup
Mozzarella - 1 cup shredded
Salt - 1 pinch

Step 3. Take the salt, pepper, and herbs and sprinkle them over the vegetables. Pour the other 1/2 cup of marinara sauce on top of the layered and now seasoned vegetables.
Step 4. Put a sheet of foil over the dish and put into the oven to bake for 25-35 minutes, depending on the thickness and size of the vegetables. Take out of the oven and sprinkle the shredded mozzarella cheese over top, re-foil the dish, and bake for another 10-15 minutes.
Step 5. Remove from oven. Let it cool and bon appétit!
