This has been my favorite meal yet! I'm not going to list out all the steps like for some of the other recipes, but here's the basics. In the photo you see three foods, one of which (the ratatouille), I made a post on how to make. I've listed below on how to cook the other two portions.
Pan-Seared Trout:
Sprinkle the salt and pepper on top of the fillet. Add the lemon juice. Heat a pan on high and place the fish skin-side down first. It should sear it, only taking 3 minutes or so. Flip the fillet and cook the other side for another 3 minutes. That is all the time it should take for a simple fillet. I like the skin crispy so sometimes I will cook it just a bit longer, and yes, I do eat the skin on this fish.
Cauliflower Rice:
Chop or grate the cauliflower into pieces the size of rice or a little bit larger, as shown in the photo. Pour olive oil into a pan on medium-high heat. Add the prepared cauliflower and cook up until it starts to slightly brown.
- Rainbow trout fillet
- Pepper - a pinch
- Salt - a pinch
- Lemon juice - 1 tsp
