My husband and I are big fans of farmer's markets so we decided to try something new and buy some lamb shanks! Looking at various recipes and combining a few to come up with my own, I've found an easy and delicious crockpot recipe for a hearty lamb stew.
What you'll need:
Lamb shank - 1
Red potatoes - 3 to 4 small
Carrots - 1 to 2 whole
Celery - 2 stalks
Onion - 1/2 to 1 cup
Cauliflower and broccoli (optional)
Oregano - 1 tsp
Turmeric (optional) - 1 tsp
Olive oil - 1 tbsp
Water or beef broth - 1 to 2 cups
What you'll need:

Step 1:
Take a frozen or raw single lamb shank and put it in the crockpot.
Step 2:
Chop up your potatoes, celery, onions, and carrots into thick pieces and add them around the lamb shank. Add the seasoning over top of the mixtures.
Step 3:
Pour the olive oil and water or broth into the crock pot.
Step 4:
Heat the crockpot on 4 hours high or 8 hours low. I have found that either will work. The best way to check if the lamb is ready is to take a fork and if the meat cleaves off the bone fairly easily, then it should be good to go.
Step 5:
Cleave the meat off the bone, you may have to pull off some fat, and evenly shred in the stew. Enjoy!
